Spaghetti Frittata
Ingredients 
  • 4-6 ounces cooked pasta, spaghetti or linguine (Can be with sauce: red, white, olive oil or just plain)
  • 3 Tbsp. pecorino romano cheese, freshly grated
  • 8 oz. mozzarella cheese, cubed or shredded
  • 6 large eggs
  • 2 Tbsp. fresh parsley, chopped
  • 3-4 slices of bacon, chopped (pancetta, ham. pepperoni, any meat you'd like)
  • salt, to taste
  • black pepper and crushed red pepper, to taste
  • olive oil
Instructions
Put oven on Broil

1) Prepare your leftover pasta by coating in a drizzle of olive oil to keep the noodles from sticking together, if your pasta is in any sauce skip this step.
2) Start by frying the bacon (meat of your choice), in an oven safe pan, in a drizzle of olive oil for approx. 3 mins (if using raw bacon cook until almost done)
3) Add the pasta to the pan and mix well, continue to fry on low
4) While the pasta is cooking, in medium mixing bowl. whisk the eggs, parsley, black and red pepper, salt, mozzarella cheese and pecorino romano cheese together. 
5) Pour the egg mixture into the spaghetti and bacon pan continue to cook on low for 10 minutes (until the eggs start to set).  Remove pan from stove top and place in oven to broil for 5-8 mins, until eggs are completely set and top is browned and bubbly. 
6) Remove from oven, slide out of pan onto a cutting board, slice like a pizza.  
7) Serve and enjoy!!
