Chicken Cacciatore (one pot)

Cacciatore means hunter in Italian, and alla cacciatora translates to a 'hunter-style' meal with chicken (or rabbit), onions, tomatoes, herbs, vegetables, and usually wine or vinegar.


Ingredients 
  • 2 Tbs Olive Oil
  •  Salt and Pepper (per taste)
  • 4 lbs boneless skinless Chicken Thighs 
  • 1 medium Onion diced 
  • 2 Green Peppers sliced
  • 6 Cloves Garlic ( Large chop)
  • 8 oz sliced Mushrooms
  • 6 oz whole Button Mushrooms (petite)
  • 1/2 cup Red Wine (dry)
  • 2 -28 oz cans Crushed Tomatoes
  • 2 tsp Crushed Red Pepper (optional)
  • 2 Tbs Rosemary
  • 4 Bay Leaves

   
Season chicken with salt and pepper
Heat Olive Oil in large heavy pot on medium heat 
Add Chicken Thighs in small batches, sear (3-4 mins per side)  
Remove from pot and set aside 
Add onions, peppers, sauté for 4 mins until they release water
Scrape browned bits of chicken from bottom of pot 
Add mushrooms and garlic, cook until vegetables begin to soften ( 5 mins) 
Add wine
Add Crushed Tomatoes
Put Chicken back into pot, gently stirring into sauce
Add Salt, Red Pepper, Rosemary, Bay Leaf
Cover and simmer on low heat stirring occasionaly  for 40 mins or until chicken breaks apart with a fork.

Serve over rice
