Escarole with Italian Sausage and Beans

                                       (Ready in 20 Mins)


Ingredients 
  • 30 oz Chopped Escarole (I buy pre-chopped to save time)
  • 1 lb Italian Sausage ( I use Hot)
  • 1 can Cannellini Beans 
  • 1 can Roman Beans
  • 6 Cloves Garlic ( Large chop)
  • 1 cup Chicken or vegetable broth ( use more or less per preference)
  • 1 tsp Fennel seeds (optional)
  • 1 tsp Crushed Red Pepper (optional)
  • 1 tsp Salt ( per taste)
  • 1 Tbs Olive Oil 

   
Put Olive Oil in large pot on medium heat 
Add Italian Sausage, start browning it
Add Chopped Garlic, continue to cook until Sausage is browned 
Add Escarole, 1/2 at a time, continue to stir to wilt the Escarole
Add Salt, Red Pepper and Fennel ( if using)
Add 1/2 cup Broth
Add both cans of beans
Continue to stir
Add more broth if you want it more like a soup
Cover and turn heat down to low, simmer, stirring occasionally, until Escarole is tender 

Spoon into large bowls
Serve with crusty Italian Bread


If you want a meatless version, just leave out the Italian Sausage and use vegetable broth.
