Escarole with Turkey and Beans

Ingredients 
  • 30 oz Chopped Escarole (I buy pre-chopped to save time)
  • 1 lb 99% FF Ground Turkey
  • 1 can Cannellini Beans 
  • 1 can Roman Beans
  • 6 Cloves Garlic ( Large chop)
  • 2 cups Chicken or vegetable broth ( use more or less per preference)
  • 1 TBL (Fennel seeds (more or less to taste )
  • 1 tsp Crushed Red Pepper (more or less to taste)
  • 1 tsp Salt ( per taste) 

   
Put 1 cup chicken broth in large pot on medium heat 
Add ground turkey, start browning it
Add Chopped Garlic, continue to cook until Turkey is cooked ( no more pink)
Add Escarole, 1/2 at a time, continue to stir to wilt the Escarole
Add Salt, Red Pepper and Fennel ( if using)
Add 1 cup Broth
Add both cans of beans
Continue to stir
Add more broth if you want it more like a soup
Cover and turn heat down to low, simmer, stirring occasionally, until Escarole is tender 

Spoon into large bowls


If you want a meatless version, just leave out the Turkey and use vegetable broth.
If you don't like beans, leave them out.
