Italian Potato Salad

         (Ready in 20 Mins and only 4 ingredients)


Ingredients 
  • 2-3 lbs Baby Potato's ( cut in half or quartered) make them the same size so they will cook evenly. 
  • 1/2 cup Extra Virgin Olive Oil
  • 2 T fresh Oregano or 1 T dried Oregano
  • Salt


Put potato's in large pot.
Fill with cold water, the water should cover the potatoes by 2 inches.
Generously salt the water  
Boil until potatoes are cooked (5-7 minutes) 
Be sure to check them so that they don't over cook or you'll have mush. 
Strain potatoes in a colander 
Let cool 
Put potatoes in a large bowl 
When the potatoes are still a little warm put them in a large bowl and add the olive oil and gently toss so you don't break up the potato's.  
Add the oregano and salt to taste, gently toss again.

Serve at room temperature

This recipe is something we had all summer.  My grandma used to make it all the time.  It's perfect for outdoor summer parties because you don't have to worry about keeping it chilled like most summer salads because they have Mayonnaise in them.  My family didn't use Mayonnaise so we usually had this and either a cucumber salad, tomato salad or just a lettuce salad.
